El dueño del restaurante peruano Arco Iris, muy popular en Kawasaki (Kanagawa prefectura) y en Gotanda en Tokio, Señor. Yoshihiro Arakaki de Argentina vino a Japón hace casi 30 años.
The owner of the popular Peruvian restaurant, Mr. Yoshihiro Arakakai spoke about his experience in Japan for us!
①¿ Cómo empezó su negotio aquí en Japón?
-Mi cuñado me ayudó, que tenía un restaurante en Peru. En los años 89 o 90, había muchos peruanos veniendo para trabajar en Japón porque había bastante trabajo aquí. Entonces, queríamos ofrecer la comida peruana para los peruanos viviendo y trabajando en Japón. En esa época, casi 95% de los clientes eran peruanos en mi restaurante.
②¿Estudió el gusto del japonés?
-No, hay importador de que se puede asegurar ingredientes mas o menos, aunque no hay todo aquí. Y no he cambiado el sabor especialmente para el gusto del japonés.
Pero he aprendido que los japonéses les gusta el sabor más suave, no tan picante ni salado y comen poco volumen. El volumen es grande aquí y esta bien para japonéses compartirlo entre dos o tres personas.
③¿Siente aveces difícil tratar japonés porque su característica?
-No, no trato japonés en manera diferente. Trato igual a japonés y peruano porque es muy difícil y muy mendokusai (pesado o difícil en japonés) cambiar la manera de tratar los.
④¿ Primero, cómo hizó publicidad a su restaurante?
-No necesitaba dar publicidad. Los japonéses que venían aquí les gustaban escuchar castellano miyo o otros. Ellos tenían bueno relación con los latinoamericanos de Peru, Bolivia o Mexico, etc que vinieron para trabajo. Y todo disfrutaba escuchar musíca, ver video y sentir ambiente peruano aquí, que quería yo realizar en mi restaurante.
⑤¿Hacer negocio aquí con su restaurante ha le dado oportunidad interesante o precioso?
-Si, conocí mucha gente, y he tenido muchos contactos. No solamente japonéses, conocí los mexicanos, panameños, americanos, canadienses, australianos, neozelandéses, etc. Todos los extranjeros tenemos algo en común dondequiera que necieron; todo añoramos nuestro países. Y espero que cuando vienen aquí, recordan y sienten sus países o sus casas.
①もともと、どのように日本でお仕事を始められたのですか？
-私の義兄がペルーでレストランを経営していましたが、日本での開店を手伝ってくれました。1988年～1990年は、沢山のペルー人が日本に仕事を求めてきたのですよ。当時は沢山仕事がありましたから。もともとは在日ペルー人の方々にペルー料理を提供したいという目的だったのです。当時はお客様の95%くらいはペルー人でしたよ。
②ペルー料理は日本人の嗜好にも合うと思うのですが、事前に日本人に合うような味付けなどを研究されたりしましたか？
‐いいえ、日本は輸入品も多いので、全部ではありませんが材料はほぼ用意できます。特に日本人用に味付けを変えたりはしていません。ただ、日本人は薄味が好きですよね、あまり辛いのや塩辛いのは好まないようですし、食べる量が少ないです。ここでは一皿が大きいので２，３人でシェアしてちょうど良いと思います。
③ 日本人は、その性質や性格上、付き合うのが難しいと感じることもありますか？
‐いいえ。私は日本人だからと言って、態度を変えたり合わせたりすることはしません。日本人もペルー人も同じように付き合います。人種によって扱いを変えるなんて、難しいですし、めんどくさいです。
④当初、どのようにお店の宣伝をしたのですか？
‐宣伝なんて、する必要はありませんでしたよ。ここに来てくれる日本人のお客様は、私や他のネイティブのスペイン語を聞くのを楽しんでくれましたしね。当時、沢山来日していたペルー人、ボリビア人、メキシコ人などと、日本人は良い関係を築いていました。このお店では、皆が一緒に、音楽を聴いたり、ビデオを見たり、楽しんでくれます。そもそも、ここでペルーの雰囲気を楽しんで欲しい、というのが私の考えでした。
⑤日本でレストラン業を営まれることで、面白い、貴重な経験をされましたか？
‐はい。沢山の人と知り合いました。日本人だけでなく来日しているメキシコ人、ペルー人、アメリカ人、ニュージーランド人、オーストラリア人、カナダ人など、本当に様々です。どこから来られた方でも、そういった外国人の皆さんには共通することがあります。祖国を懐かしむ心です。そんな外国人の皆さんに、ぜひこのお店で祖国を思い出してもらえたら、と思っています。
① How did you first start your business in Japan?
-My brother in law used to run restaurant in Peru, and he helped me to open mine in Japan. At that time back in 1988-1990, so many Peruvians came to Japan for work. There were many jobs in that era, so my original purpose was to offer Peruvian food to the Peruvians living in Japan. In those days, 95% of the customers were from Peru.
② It seem that Peruvian food suits Japanese taste, but did you still study the taste or seasoning of Japanese?
-No, lots of imported ingredients are available in Japan, so I can secure most of what I need, although not everything. And I do not alter the taste specially for Japanese customers. However we still learned that Japanese tend to like rather bland taste, not too spicy or salty. And they eat only small portion. We offer large portion but it also works as they can share one plate with two or three people.
③ Do you sometimes feel difficult to get along with Japanese people because of their characteristics?
‐No, and I do not change the way to treat people because they are Japanese or Peruvians. I treat all equally. To change behavior would be too difficult and cumbersome too.
④ How did you publicize your restaurant at first?
‐I did not have to publicize at all. The Japanese customer who came here liked listening to me speaking Spanish, or others. At that time, Japanese people had good relationship with Peruvian, Bolivian, Mexican, etc who came to Japan. And here everyone can enjoy listening music, or watching video together. My idea was for everyone to enjoy the atmosphere in Peru here in my restaurant.
⑤ Have you had many interesting and precious opportunities by running restaurant business in Japan?
-Yes. I met and go to know so many people. Not just Japanese people, but Mexican, Peruvian, American, Canadian, New Zealanders, Australian, etc etc. Wherever they are from, they have something common; the nostalgia for their own home countries. I hope that all of the foreign people will remember and feel their own countries and their home here in Arco Iris.
